Crock Pot Maple Dijon Pork Chops

For the past few months I have been rather obsessed with making pork chops in the slow cooker.

Pork chops.

I don’t know why it’s pork and not chicken or beef, but ever since Adam’s mom was in town right after Grayson was born and cooked us the most amazing pork chops, I have been addicted. Pork chops are not only super versatile, but also usually pretty affordable. I love to pick some up at the store to throw in the freezer for quick filling dinners.

There’s so many ways to cook pork chops — my absolute favorite way is a Nigella Lawson recipe that involves hard cider, a lot of cream and gnocchi on the side — but lately I have {obviously} been using my slow cooker a lot. I thought I appreciated that thing before, but as a new mom I have to say it’s the best kitchen appliance ever invented. The evenings are still Grayson’s fussy time, which means mama has maaaaaaaybe 20 minutes to throw together dinner before a meltdown occurs.

These pork chops are a spin off another recipe I’ve been making a lot lately, maple bourbon pork chops. Well, I ran out of bourbon so I used mustard and man, did they ever turn out good! Adam gobbled these up at record pace and ate what little leftovers we had for breakfast.

I know we all love those slow cooker recipes that just involve dumping everything in the pot and pushing cook, but please trust me here when I say it makes a difference to sear the meat on the stove first! Only then can you get that great caramelization that occurs. You can still prep this in under ten minutes and it’s worth it to drag out one more pan, I promise.

Crock Pot Maple Dijon Pork Chops

serves 2-3

Print this Recipe!

Ingredients:

2 large bone-in pork chops

1 large yellow onion, chopped

3 tbsp pure maple syrup

2 tbsp dijon mustard

1/4 cup cider vinegar

1/4 tsp salt

1/8 tsp pepper

1 tbsp vegetable oil

Directions:

Heat up the oil in a large skillet over high heat. When hot, add the pork chops and sprinkle generously with salt and pepper. Sear both sides of chops over high heat (about 2 minutes per side) then transfer to your Crock Pot.

Lower the heat to medium low and add the onions. Cook until onions are just starting to soften then add the cider vinegar, maple syrup, mustard, salt and pepper. Cook for 2 more minutes and then pour sauce over chops in the slow cooker.

Cook on low for 6-7 hours. Serve chops drizzled generously with sauce.

Time:

active time ~ 10 minutes

total time ~ 7 hours

    Wow these pork chops look phenomenal! I have to say I’m overall not a big pork chop fan but it’s because they aren’t prepped right. Utilizing the crock pop with the maple syrup and mustard I might become a fan after all!

      You could use a dutch oven if you don’t have a slow cooker. Just do all the prep then put in the dutch oven with the lid secure and cook at 275 for about 3 hours.

      I flaked out and didn’t prep my slow cooker. I used a cast iron grill skillet, seared the chops them removed to a plate, sautéed the onions with a little more oil, then added the chops back. I sort of heaped onions on them. I poured the liquid over, covered with foil, and baked at 350 for about 30 minutes. I used away thermometer, so the time could vary depending on the thickness of the chop. It was still quick and easy

    Mmm, I love pork chops…especially when mustard is involved! I have two more months to go until I’m a first-time mom, so I have been stocking up on the slow-cooker recipes/freezer meals for sure. I’ll definitely be adding this one to the list!

    With the breakdown of my 20 year old crockpot, I recently purchased a new crockpot that also functions as a stove top. [insert happy dance]

    It has three functions, stove top, crockpot and steam.
    But the ability to sear off meat or veg prior to turning it to crockpot mode [deducing dishes to an all time low] has been life changing.

    The one I purchased was a Ninja brand – though I’m sure there are others out there. I’ve been super happy with my purchase and the sticker shock helped by watching for some good sales.

    Do you think it will be too tough if I do it with boneless pork chops? Our grocery store doesn’t carry organic bone in 🙁 and I happen to have a think of pork chops in the fridge. I love the crock pot approach. I have an 18 month old and I’m starting to feel like I have a baby again, because he constantly wants to “help.” I love that I could prep these during nap time! Thanks

      Nope! I think boneless would be fine. Just reduce the cooking time a bit. 🙂

    this is SO up our alley! i am loving stuff like this (easy, throw in the slow cooker, and go). hopefully we are buying our deep freeze this week so i can start stocking up on pork chops and frozen meals!

      I’d throw in some thickly chopped carrots at the beginning. Serve with a green salad and you’re done! 🙂

    Do you think these would work with boneless porkchops? Our grocery store doesn’t carry organic bone-in porkchops….plus I already have some in the refrigerator 🙂 I love the idea of doing them in the slow cooker. I can prep during nap and enjoy knowing that dinner is already made!!

      I do! You might want to reduce the cooking time a bit (check after 5 1/2 hours) but yes – boneless is perfectly fine.

    Oh My Godness!!
    I’ve never made one of your recipes so fast or so furious! I could kiss you.
    My second son is 6 months old and has finally started going down for a nap without being held in the morning. I totally forgot about the slow cooker!!! DUH!

    I love my slow cooker! Maybe this is a way to get my hubby to eat pork chops, they always come out dry any other way.

    These look amazing! I love a good piece of pork but tend to fear drying it out. It is a tricky type of meat to cook for sure. Great idea for throwing them in the slow cooker! Can’t wait to try it out.

    This looks so good! I have never been a big pork fan, but lately I cannot get enough! We went to Puerto Rico in the beginning of July and I ate as much mofongo with pork as humanly possible! I’m definitely going to pick up some pork chops next time at the grocery store 🙂

    Long live the crock pot. Such a great cooking device for hot weather! I cook up pork butt and tear it apart and use it in bbq pork on a bun, I cook a chicken and use it in salads, all ideas that help me put meals on the table without heating up the kitchen are good ideas.

    Pork chops were on sale today and I just bought some with no ideas in mind. Perfect timing stumbling across this! I am sans slow cooker at the moment though, hopefully covering it with foil and baking it will get the same effect!

      I cooked 4 chops when i did these. My slow cooker seems to cook hotter then normal but I cooked mine for 6.5hrs and they came out perfect! Not dry at all and cooked all the way. Hope this helps.

    I am making these for dinner tonight and my kitchen smells SO GOOD! In your recipe, you wrote’ dijon mustard’ … but in the picture, it shows the stone ground mustard and I see it on the pork chop in your finished pic too … I just used regular dijon mustard because that is what the recipe called for and I didn’t remember seeing the stone ground in the pics – do you prefer using the stone ground rather than just the plain dijon mustard? Making roasted broccoli to go with these amazing pork chops tonight!
    Thanks so much for another great recipe – we are trying to limit eating red meat, so this is perfect timing. I’m sure my hubs will love it too! 🙂

    I made these yesterday for my family. They loved it! Even my 8 yr old who is a picky eater wanted seconds.. 🙂 I followed the directions but put in some ginger and extra onions. Also, I made four pork chops but doubled the receipe. Will be making these again for sure!

    Sorry, tasty but the chops were very dry after cooking so long. The sauce was good. I think I’ll just shred the meat a mix it with the sauce.

    Would it turn out the same if when I transfer everything to slow cooker, cook it on High for half the time (3-3 1/2 hrs)?? Or is cooking them on low necessary for this recipe?

    Hi, I REALLY want to try these! I’ve made so many different recipes lately for crock pot pork chops, ALL coming out way too dry 🙁
    This recipe says to cook the chops 6-7 hours. If I do that, I know they will be ruined. Just wondering what kind of crock pot you use. I have the basic Crock Pot, which I purchased about 8 years ago. Bought a new one back then to have an updated look. I should NEVER have gotten rid of my old one. The new one cooks TOO FAST! A lot of my friends have the same complaint. So I’m really interested in what crock pot you are using. Thanks for e-mailing me directly. Ally 🙂

    I’ve made this recipe twice now! I double it so we have leftovers and this time I added sauerkraut which was a delicious addition. The sauce goes over a baked sweet potato so well.

    I have these in the crockpot they smelled delicious. I am using Thick cut Iowa pork chops. I’ve used them before I only cook them for ours online .Otherwise they come out dry.I will also cook your recipe 4 hours on low.Can’t wait to smell Driving me crazy

    Really looks delicious and mouthwatering. Pork is one of my favorite meals on the table. Hope mornington restaurants have like this in their menu. I really want to try this.
