Mint Mojito Iced Lattes

You want to know what I love?

Coffee. Strong coffee.

As a new mom getting less than stellar sleep, I’ve come to appreciate coffee in a whole new light. Now before you all get your panties in a bunch, let me clarify that I only drink one or two coffees a day and never right before I breastfeed. Don’t worry — I’m not sitting here downing seven a day, even though some days I might want to. Grayson eats every 3 – 3.5 hours so I conveniently schedule my caffeine intake around his meals.

That being said, about a month ago I discovered a tasty new treat at my favorite local coffee place, Philz. It’s called a “mint mojito coffee” and it’s sooooooooo good. Like, insanely good…the best thing you put in your mouth all day good.

I don’t know how Philz makes their iced coffee, but I tried to recreate it at home the best I could. Note that this is definitely a “lightened up” version than what’s at the coffee shop. I have a hunch theirs is so addicting because they use cream and a lot of it. You could definitely substitute the milk for cream in this recipe for a creamier, guilty pleasure version, but I think mine is pretty good the way it is.

The mint simple syrup is super addicting and would work great in a fun cocktail so you’ll be glad you have extras! It’s definitely worth it to take the time to make the simple syrup and let it chill and infuse in the fridge overnight for the most flavor. I was literally drinking it from the spoon before making this iced latte with it. Oops.

Mint Mojito Iced Lattes

yields 1 latte with leftover simple syrup (works great in a cocktail!)

Ingredients:

for simple syrup ~

small handful of fresh mint, roughly chopped

1/2 cup sugar

1/2 cup water

for lattes ~

1 cup brewed strong coffee, cold

1/4 cup milk

3 tbsp simple syrup

Directions:

First, make the simple syrup. Combine the mint, sugar and water in a small saucepot over medium heat. Bring to a boil, stir so that all the sugar dissolves and remove from the heat. Transfer to a small bowl or jar and let sit in the fridge for at least 4 hours or preferably overnight to infuse the most flavor.

When you’re ready to make the lattes, strain the mint from the simple syrup. Discard mint. combine your coffee with the milk and three tablespoons of prepared syrup, according to taste. Stir well and garnish with fresh mint!

Simple syrup will stay fresh in the fridge for two weeks.

Time:

active time ~ 5 minutes

total time ~ 4 hours or overnight

    Mint coffee is the best thing ever! I’ve been obsessed all summer. Coffee is definitely my biggest cheat during pregnancy – I allow myself one cup of coffee daily, and it is my favorite part of the day. I’m sure that will carry over into new mommyhood!

    fnu story: two days before i announced to my work team that i was pregnant, two of my coworkers announced to the whole team that they would know when i was pregnant, because i would have to stop drinking coffee. they said this as i was standing there, 12 weeks pregnant, travel mug of caffeinated coffee (the appropriate amount of course!) in hand. i had to bite my tongue so hard to keep from saying anything. let’s just all assume that people we know are already healthy moms/moms-to-be are listening to their bodies and know what’s okay to do.

    I went to SJ for training for work, and my boss took me to Philz. BEST COFFEE EVER! Definitely will make note to check out this one when I’m there in a few weeks ๐Ÿ™‚

    This sounds heavenly! I’ve been keeping mint simple syrup in my fridge ever since it was over 80-degrees! I love it in iced coffees, cocktails, and I’ve even been adding it to sparkling water with a dash of vinegar.

    Oh, how I miss Philz, especially their Mint Mojito! Their version is definitely heavy on the cream and sugar, but works as a nice treat drink when I’m around the bay area (I live in Sacramento now). A homemade version is a great idea! ๐Ÿ™‚

    I’m honestly not much of a coffee drinker but that could change if/when an infant enters my life. The addition of mint sounds like the perfect pick-me-up!

    Philz!!!! My go-to when I’m at school ๐Ÿ™‚ You should try their Ecstatic Iced Coffee (and tell them to make it Sweet and Creamy) – I love it even more than the Mint Mojito one!!

    yum! I love coffee!! as the mum of an 18 month old I still need to consume it multiple times a day to function ๐Ÿ™‚ and I drank coffee (the real stuff!) the whole time I was breastfeeding and it never seemed to affect my daughter but it sure did help her mum out! Will definitely be giving this recipe a go when summer starts up here at the end of the year!

    Finally a food post…I’ve been waiting patiently (ish). I seem to remember a post long ago about how this wouldn’t turn into a mommy blog but the baby/diapering/parenting to food-focused content ratio is dangerously close..

    …that said I totally get it and 100% your prerogative–that’s the beauty of a blog! I hope to see more of this content in the coming months as I truly appreciate your great recipe ideas.
