Summer Gazpacho with Shrimp

With both the summer heat AND a new baby, I really don’t want to be slaving away over a hot stove these days. Now, more than ever, I am going for quick and easy meals that satisfy.

Because I’m breastfeeding, I am SO HUNGRY ALL THE TIME….like, it’s insane how hungry I get. I like to prep easy meals and snacks for the upcoming week over the weekend when Adam is home and can help watch Grayson while I spend a little time in the kitchen. Bless everyone that ever took a new mom dinner! There was absolutely no way I had time to cook a meal during the first two months. Heck, it’s still really hard and we’re still eating our way through the freezer! At one point around the 6pm fussy hour, I looked at Adam and said, “I really don’t think I’ll ever have time to cook ever again.” Well, I still don’t have time to cook like I used to but I’m getting there, slowly but surely.

For those busy evenings, whether you’re a new mom or not, this summer gazpacho is the answer.

This is one of the recipes I developed recently for the Barre3 blog so you know it’s on the healthy side. 😉 I know I rave about Barre3 all the time on here but I have to give it one more prop as a new mom.

I’ve just started doing the online workouts again postpartum and it’s been such a life savor. Truly truly. I can’t rave enough. I had a tough delivery and feel like I pretty much lost every bit of my core. Over the past few months I’ve had a lot of backaches as a result. The Barre3 workouts have really helped with that by working to strengthen those back body muscles again! Naturally, my body isn’t the same as it used to be but it’s not meant to be. I pushed a nine pound child out! Plus, I have to keep my calories up to feed him. I don’t do the workouts to lose a ton of weight, but rather to strengthen those muscles that have become super weak — and they work!

Okay, off my soapbox for the day.

This soup combines a fantastic serving of veggies with ample lean protein from shrimp. I could eat shrimp every day and be a happy camper – I love them so. It’s ready in 20 minutes and tastes great. I hope y’all like it as much as I do!

Summer Gazpacho with Shrimp

serves 4

Print this Recipe!

Ingredients:

1 cucumber, sliced

1/2 small red onion, minced

1 bunch fresh parsley, chopped

1 red bell pepper, chopped

1 clove garlic

juice of 1 lime

1/4 cup extra virgin olive oil

1/4 cup balsamic vinegar

2 cups tomato juice

1/4 tsp salt

1/8 tsp pepper

16 large raw shrimp, peeled and deveined

Directions:

First, make the gazpacho. Combine all ingredients except for shrimp in a high speed blender or food processor. Whirl until just blended. Taste gazpacho and season with extra salt and pepper if needed. Place in the fridge while you prepare the shrimp.

For the shrimp, heat up two tsp olive oil in a large skillet over medium heat. When hot, add the shrimp and briefly saute until pink and curled. This will take only about 4 minutes since shrimp cook so fast. Sprinkle shrimp with salt and pepper and remove from heat.

To serve, ladle gazpacho into bowls and top with four sauteed shrimp.

Time:

15 minutes

    I don’t do shrimp, but the rest of this looks lovely! I love the quick and easy aspect for sure. There will be a time when you feel like you have time to cook again, it will just take a while. The newborn stage is crazy!

    There is some commercial stating “babies are time thieves,” and they are totally right! The evenings especially suck so much. But you’ll cook again soon, with your own little sous chef to “help” you! Good luck; you’re pretty much doing the hardest thing you will ever have to do in your life 🙂

    I love, love, love gazpacho and my favorite one I ever had was down at the shore in Jersey. I might add a little clam juice and tabasco to this and make it on Sunday!

    This is 27-kinds of gorgeous, and I love the shrimp! My friend just had a baby, and I want to bring her a cool pot of this soup. Casseroles are nice (and classic), but everyone needs something a little lighter now and then!

    so pretty too! i’m sure you’ve read it already, but the cookbook/memoir “dinner: a love story”, from the blog, is such a good reminder of the phases of life dinner goes through based on where we’re at in our own lives. the second part is all about dinner with young children and keeping a semblance of normal through it all, whatever that means for you! you’ll find your new normal again soon.

    I agree with not having anytime in the kitchen when the baby is here. I’m due with my fourth in September and I’m trying to get freezer meals ready to feed the 5 of us when he arrives. It is just so hard. After the last one, I didn’t have 2 free hands for months and months because she was a needy baby and hated the carrier. I try to give meals to people in crisis and after the baby arrives. I hope someday I’m paid back for all those meals I have prepared for others but it might not happen because it hasn’t happened yet. I want to start a movement. Stop buying the baby cute outfits when they arrive, bring the parents a casserole, soup, sandwiches or even a gift card for take out. Paper palates and plastic silverware isn’t a bad gift either. I’m glad things are starting to settle down for you. Having a kid is such a life changing experience that you can’t even wrap your head around it until it happens.

    Good to know you’ve not been able to cook the past couple months (not ‘good’ that you haven’t been up for it, I mean good as in, I’m glad I know so I can maybe somewhat be prepared for that). I’ve already stocked our freezer with what I thought was a decent amount of meals. Guess I should make a few more in the next 5 weeks.

    I hear ya on gifting families meals after a new baby arrives! Although, I wasn’t so fortunate this time around…. We’ve been relying on a lot of frozen, pre-made stuff lately as I wasn’t able to get much in the freezer before my little one came along.
    This looks like a delightful summer meal. Hopefully, I’ll be able to get it on the table one of these nights soon! 🙂

    I LOVE this. Simple, healthy and quick to make. I’m trying to make more soups…it’s winter where I live – do you think this would taste okay warmed up on the stovetop after blended?

    Thanks for this recipe Jenna. God bless you and your family, I’ve been following you on instagram and I love seeing all the pics of Grayson. I loved reading your birth story, it was so honest. I think a lot of us have an idea of what our delivery will be like and then it goes completely different. My son was born early at 28 weeks in April and that definitely turned our world upside down.

    I know you’re not saying that you are, but I recall how easy it was to think your old life was “over” for who knows how long, and that it is suuuper easy to get challenged negatively by the tough times of new parenthood (esp when no one is getting great sleep all the time!!) , but you’ll survive, he will thrive, and you will be able to incorporate your old ways into your new life. Promise!!

    This gazpacho was delicious and so easy to make. We’ve been having 90+ days where I live, and this is the perfect meal for hot weather.

    I did find that a whole bunch of parsley is way too much. It turned my gazpacho brown and overpowered the tomato flavor.

      I second this comment about the parsley. Maybe I took the “bunch” too literally, but my gazpacho is definitely not red. Oops!
