Looking for a an easy man-child-family-everyone-friendly dinner? Well, look no further.
I worked to lighten up one of my favorite dinners of Mexican casserole with lean ground turkey instead of beef, fat-free refried beans and a light Mexican cheese blend. No, I’m not on a diet over here but sometimes it’s just nice to have a lighter alternative…you know? I mean…let’s be honest — swim suit season is right around the corner and so is my wedding. I feel like without trying, I pretty much follow an 80/20 “healthy eating” principle in my life. That means if I eat healthy(ish) 80% of the time, I can afford to splurge 20% of the time. And splurge to me means weekly french toast and bacon, In n’ Out cheeseburgers and mint chocolate gelato. It’s all about balance, people!
I ended up loving the lightened up version of this casserole so much more than the original! It’s perfectly spicy, cheesy and satisfying without being too greasy and heavy.
You start with lean ground turkey, zesty diced tomatoes, fire roasted green chilies and lots of spice. This meat blend would also be great served over lettuce as a taco salad! Just make sure to drain your tomatoes before using so your meat doesn’t get too soupy.
Next, you layer the spicy ground turkey with strips of tortilla, refried beans, more diced chilies and a sprinkle of cheese. Kinda like a Mexican lasagna!
After a quick bake in the oven, dinner is served. I loved mine with avocado, sour cream and a {big} splash of hot sauce! You know me and hot sauce.
I hope y’all enjoy this dinner as much as Adam and I did! I actually gave him the leftovers to take to work and apparently everyone practically licked their plates clean.
Turkey Taco Casserole
serves 4-6
Ingredients:
a little over 1 lb lean ground turkey
1 16-oz can refried beans
2 4-oz cans diced green chilies
1 cup fire roasted diced tomatoes, drained of extra “juice”
1 tbsp chili powder
2 tsp ground cumin
1 1/4 tsp salt
1/4 tsp cayenne pepper
2 flour tortillas, cut into 1″ strips
1/2 cup salsa, plus more for serving
1 1/2 cups reduced fat Mexican blend cheese {or cheddar cheese}
sour cream for serving
sliced avocado for serving
Directions:
Spray an 8″ square casserole pan with nonstick cooking spray. Set aside. Preheat oven to 375 degrees.
Spray a large skillet with nonstick cooking spray and place over medium high heat. Once hot, add the ground turkey. Brown turkey, breaking up the bits and pieces with a rubber spatula. When turkey has browned {but hasn’t quite cooked all the way through yet}, add the chili powder, cumin, salt and cayenne pepper. Mix well.
Add one can of the diced green chilies to the turkey, along with the fire roasted diced tomatoes. Stir well and continue to cook until turkey is completely done. Then, remove from heat.
Spread a thin layer of ground turkey at the bottom of your casserole pan. Top with a layer of refried beans, more green chilies, a heavy sprinkle of cheese and four of the tortilla strips. Repeat this process three times until all of the ground turkey has been used. After laying on your last four tortilla strips, spread the salsa over top along with remaining cheese.
Place in the oven for 30 minutes. Cheese will be melted and bubbling. When casserole comes out of the oven, let sit for 20 minutes before slicing. Serve with sour cream, hot sauce and sliced avocado!

I had trouble spreading the refried beans— that layer kind of ended up being the meat mixture and refried beans… it was hard to spread it evenly and not have it come out in one clump… it’s kind of glue-like to move those beans around! March 4, 2013 at 8:24 amI made this on Friday night, and it was a HUGE hit with the husband and the kiddos. I did have to cut the chili powder back to a heaping 1/2 T, the cumin to 1.5 tsp, and the cayenne to 1/8 tsp. I have kids who sadly don’t appreciate burning lips and tongues.

August 18, 2014 at 3:18 pmOften I get my hopes up when trying a new recipe and sometimes it is a flop. Not the case with this. It was phenomenal! I did have a few adjustments based on my family personal preference. I mixed the beans with the meat mixture to make it more creamy and I also saved an extra step on spreading the beans separately. I added a layer of frozen corn between meat and corn. I only used one can of green chilis and only one tsp. of salt instead of 1 1/4 tsp. I used whole grain tortillas. I saved the salsa for after cooking and made the top layer of tortilla strips with cheese on top. That way the tortillas had a little crispy cheesy crunch. This tasted way more decadent than it should have with a little Greek yogurt and guacamole on top. Thank you for our family new favorite meal!

When your child is hungry, he can feel grumpy and cry without any reason. Most of the time, these reactions are outdoors. It is necessary to evaluate this reaction well and encourage the child to eat.
Can children who do not eat food add a habit of eating with the game?
Of course, the game at friv 2 is very important for the development of a child. However, the game should be applied up to 2 years of age. The game can be cooked until 2 years of age, after which the game is not suitable for eating and eating habits. Because we can apply certain rules, we have to give this habit to the child from their early ages. It is an important role model for the child to eat together with the family, to sit in the table together. Even if you have not eaten your food, sitting in the family cafeteria is important for the development of the child.
It is best not to make your meal times boring. This is also very important in terms of communication with children. A child who does not eat will want to have a loud tone and different and abrasive expressions will be used. I think it is also important in terms of food.
You can make your child’s dinner sessions more engaging at some point. But do not take it to the point of a child who opens your mouth like a robot in every advertising cycle, sitting in front of friv unblocked video-recorded ads.
