Yep, I could get used to waking up to this view.
I set my alarm this morning for 6:30 because I knew I had to be at the Equine Experience at 8:00 and wanted ample time to take photos and eat. However, when 6:30 rolled around I simply was stuck in the bed. It sucked me in with its billowness. Billowness is not a word but I’m making it one today because I just don’t know any other way to describe it.
After rolling around in the whipped cream comforter for a few minutes, I finally pulled myself out, got dressed and wandered to breakfast.
Another wonderful memory of Miraval from seven years ago—-the BREAKFAST! Everyone here knows (if you’ve been reading my blog for awhile) that breakfast is my favorite meal of the day. And, although I do love my oatmeal, I love options. I love buffets. I love seconds. And thirds.
The breakfast buffet at Miraval could win the award for healthiest breakfast on the face of the earth.
They had steel cut oatmeal, of course, but since I can make oatmeal whenever, I chose swiss muesli instead.
With lots of fresh berries:
And grapefruit juice. And organic tea.
And a chicken sausage that I ate on my way back to my table.
The muesli was perfect and I topped it with a little brown sugar and a few walnuts. Still pondering how it was made because it didn’t taste like it was prepared with yogurt. I’m guessing it was rolled oats mixed with dried fruits and nuts and soaked overnight with skim milk. But I’m not for sure on that. I will research and then post my findings because it was THAT good.
I was pretty full from my breakfast but I still debated getting a smoothie just because it was there. Is that a problem?
I didn’t get a smoothie but I plan to later today. I shall report back.
I’m going to write a full post on my Equine Experience because it’s just too much to include in this one. But….here’s a preview:
Let’s just say my experience with the horses this time was completely different than my experience seven years ago. It was intense…..like, really intense.
But more on that in a little bit.

I just read the description of the Equine Experience. I didn’t realize that you would be “getting a chance to notice personal patterns of learned behavior that may be holding you back from the life you want to live”. I think that is just so awesome!
