I bet y’all were wondering where I got the chicken from to make chicken salad the other day.
Actually, you were probably just wondering where I got the moldy bread to make the sandwich. And DID I REALLY EAT IT??!??!! No, short story is that after I noticed the spot of mold on the bread, I scooped the salad on tortilla chips and happily dug in.
Food bloggers: they’re just like us! They get mold on their bread, runs in their panty-hose, have a special pair of “fat pants”, and break out at inopportune times. Forgive me.
Now, back to the chicken.
She’s organic! And I’m sure lived a very happy life roaming around a Northern California farm before making it into my oven. If there’s one thing I love, it’s a good roast chicken.
And this one is special because I use the secret special super fab ingredient that makes all things good:
You’ve probably been using this stuff for years. You also probably never get mold on your bread or zits on your chin! But as for me….I just found out about this magic powder and have been liberally rubbing it on everything since.
It’s nothing fancy….I think it cost $2 at Safeway?
So to make this roast chicken, all I did was smother the sucker in this seasoning, stuff a head of garlic inside and after it was done roasting to perfection, I brushed the whole thing was enough honey to make your grandma swoon.
The end result was a sweet, spicy, tender roast chicken that made a wonderfully comforting meal alongside rice and veggies as well as killer chicken salad.

Never roasted my own chicken but admit to copping out and buying the deli ones at the supermarket. Love the BBQ or the lemon and rosemary….garlic? Is that overwhelming though?? I’d think I’d rather stuffing it with bread stuffing 😉

This chicken looks great – will definitely try it! Love your blog! I have some friends who live in Savannah and I just LOVE Southern folks … so warm and so gracious, among other many wonderful qualities. I want to do a Savannah, SC & NC trip sometime soon … eat good food and experience all the great things in Savannah, first and foremost! 🙂
