Here’s that one more treat I promised you yesterday!
Are you in a sugar coma yet? Because I am. I finally took care of that chocolate cake craving the other day by “convincing” my husband we needed to stop for cupcakes after interviewing a pediatrician and going out for Indian food. Okay, obviously the best part about being pregnant is growing a precious little life inside of you but let’s be honest — I’m having a lot of fun eating for two over here.
Well, in case you aren’t sugared out yet, I beg you to try this deliciously creamy and sweet hot chocolate made easily in your crock pot! I had been hearing about people using this method and couldn’t think of a more opportune time to try it myself than in time for Valentine’s Day weekend. How sweet would this be as part of Valentine’s Day breakfast?! Or, really…any time at all. It’s soooooooo creamy with just a hint of spice. I don’t think I’ll ever make hot chocolate any other way!
Here’s everything you need! Sweetened condensed milk, milk, half n’ half, cinnamon, cayenne, vanilla, chocolate chips…and sea salt {not shown}. I bet you could even make a version using coconut milk if you tried! This recipe is seriously versatile and just so yummy.
So all you do is throw all the ingredients in your crock pot, turn the timer on low for an hour and a half and you’re set! This would also be fun as part of a hot chocolate bar with friends. You could have a big crock pot of this set out, as well as a topping station with fun things like whipped cream, marshmallows, cinnamon for sprinkling, chopped bits of peppermints, crushed graham crackers, mini red hots…the sky is the limit!
I was a purist and just topped my hot chocolate with homemade whipped cream and cinnamon. Perfect afternoon pick-me-up!

Crock Pot Mexican Hot Chocolate
serves 4-6
Ingredients:
1 cup half n’ half
4 cups milk
1 cup sweetened condensed milk
1 cup semisweet chocolate chips
1 vanilla bean, seeds scraped out OR 2 tsp vanilla extract
1/2 tsp cinnamon
pinch of cayenne pepper
pinch of sea salt
Directions:
In your crock pot, whisk together the half n’ half, milk and sweetened condensed milk. Add chocolate chips.
Turn heat to low and cook for 1 1/2 hours. At this time the chocolate should be melted. Add vanilla and whisk in the cinnamon, cayenne, sea salt.
Serve with whipped cream and cinnamon or marshmallows or both! π
Time:
active time ~ 3 minutes
total time ~ 1.5 hours

Its plain compared to this, but so good!

It’s the best! It reminds me of Christmas because that’s when my mom always made it. Even as adults, my sister and I still ask for “Popular Chocolate” when we visit over the holidays!
