I am definitely a potato salad girl.
When asked at delis if I’d like chips, fruit or potato salad to go with my sandwich, I always go for the potato salad. It’s actually kind of weird how much I love the stuff since I’m just sort of lukewarm on potatoes in any other form. I mean, don’t get me wrong, I wouldn’t pass up a plate of mashed potatoes any day but it’s just not my favorite. Now, sweet potatoes with syrup and marshmallows? Well, that’s another story.
But yes…potato salad! I love the stuff. And while I’m a huge fan of traditional creamy potato salad {this recipe? to die for}, I do like branching out and trying something new every once in a while.
This recipe comes from Georgia Pellegrini’s new book, Modern Pioneering! I was SO excited to get my hands on this and bought it the day it came out a few weeks ago! I just feel like Georgia and I are sort of kindred spirits in our love for doing things the old fashioned way.
Okay, let’s be honest: she’s totally my girl crush.
I debated which recipe I wanted to share out of her new book since they all sound so delicious, but picked potato salad for the above stated obvious reasons. It was different than any potato salad I’ve ever tasted {in a good way!} and had so much flavor! I loved the addition of the apple cider. So interesting and unique.
This dish would be aย PERFECT to your Easter dinner in a few weeks!
In addition to recipes, Georgia’s book contains dozens of simple “how-to” projects on everything from gardening to canning. The photos are gorgeous, naturally. I am totally making a watermelon keg this summer!

Apple Cider Potato Salad
serves 10
from Modern Pioneering
Ingredients:
1 5-lb bag of Red Bliss or other thin skinner potatoes, skins intact
1/2 cup salt
1 tbsp cayenne
8-10 cloves garlic
2 bunches green onions, thinly sliced
1 cup chopped basil
1 cup chopped kalamata olives
juice of 2 lemons
1 cup apple cider or apple juice
1 cup extra virgin olive oil
1 tsp paprika
1 tbsp pepper
2 tbsp red wine vinegar
1/4 cup coarse mustard
1 cup yellow or white onion, finely diced
Directions:
Place the potatoes in a large pot and cover with water. Add the salt, cayenne and garlic cloves and bring to a boil. Reduce heat and simmer until fork-tender — about 40 minutes.
In a large bowl, combine the green onions, 1 cup basil, lemon juice, apple cider, olives, olive oil, 1 tbsp paprika, pepper, vinegar, mustard and onion. Allow to sit and macerate for a few minutes.
Once the potatoes have partially cooled, chop them roughly until chunky and add to the mixture. Stir well.
Garnish with additional basil and paprika and serve slightly warm.
