I have to apologize, my friends, because I have been keeping something very important from you for awhile now.
And that something is this watermelon cooler. OH MY WORD it is good. It’s just so simple that for the longest time I didn’t share because I assumed everyone did this. It wasn’t until two weeks ago when we were enjoying these drinks in the backyard while the kids played in the inflatable pool (we are classy!) that Adam said, ‘you know, you really need to put this on the blog. It’s just so great.’
And you guys? It doesn’t even contain alcohol. Not even Rose! I mean…it’s just that good without it. It really doesn’t need a thing (although if you do add Rose or even Tequila, please report back).
ALL this is, you guys, is blended up watermelon, lime juice, agave, ice and salt. That’s it. Grayson calls them melon slushies and I call them coolers because, well, it sounds cool. I think I am like every single other pregnant woman in summer because all I want in life is watermelon and/or agua fresca. This really is the best of both worlds. Heck, if you let the slushie sit a while so the ice melts, it actually BECOMES agua fresca!!!! See? The best of both worlds.
I hope you guys make these every weekend from now until forever. I know I am. I’ve started buying the two-in-a-bag melons at Costco because one watermelon just isn’t enough to see us through. Plus, watermelon is loaded with antioxidants and recently, I read that eating watermelon can lower your risk of cancer but don’t quote me on that. Either way, it’s delicious and you should drink up!
- 1/2 whole small watermelon sliced and rind removed
- 2 whole limes juiced
- 1 tbsp agave nectar
- 1/8 tsp kosher salt
- ice

Blend all ingredients in a high power blender until smooth. Either drink immediately or store in fridge for up to a day and enjoy icy cold watermelon lime juice!

July 8, 2018 at 6:40 pmI tried making this by using frozen watermelon chunks in place of the ice. My blender was NOT happy. LOL. I had to add a lot of milk in order to get it to blend. BUT – the flavor was great and the texture was amazing – almost like an icee.
