I’m excited to share another super easy weeknight recipe with you guys that features new Green Giant steamers! Y’all know how much I love eat fresh produce from the farmers market when I can, but I have to say that these frozen steamers come in mighty handy sometimes. Like…when you have a new baby, for example!
I didn’t expect to like this Tuscan broccoli as much as I did but it’s actually really tasty and makes this yummy dinner come together in a snap.
I threw together some pasta and broccoli with an easy light homemade alfredo sauce and bam…dinner was on the table in fifteen minutes flat. I love creamy sauces but don’t eat them very often because let’s be real, they don’t help me fit back into my pre-pregnancy jeans. However, this sauce is much lighter than traditional alfredo sauces and tastes just as great without the guilt! Amen to that.
I hope you guys love this incredibly tasty weeknight meal! I know we do and it’s become a staple in this house. Adam loves it just as much as I do!

I also looked up the recipe and noticed it was made with cream and cheese, so I’m thinking it’s not that much lighter than normal alfredo sauce (you’re basically just subbing a little bit of oil for the butter).

October 15, 2014 at 8:15 amAll she’s saying is that it’s a lightened up version of pasta alfredo. it only uses a 1/2 cup of cream, which, compared to other alfredo recipes i’ve seen is definitely far less. I’ve found Jenna’s recipes to be sort of lightened up versions of comfort food… but always delicious. if you’ve never tried any of her recipes, i highly recommend you do. but, if you’re looking for something super healthy, anything with the words “pasta” and “alfredo” in it, you should probably pass over anyway.

October 13, 2014 at 12:27 pmI totally get that you are a busy new Mom and that the blog is your own space, but the last two recipes you posted are for Green Giant and don’t really have the “Eat Live Run” vibe. I rely on your website a lot for recipes (I just made your green enchiladas last night!), so it’s a little disappointing to see two of these recipes in a row. I know you have to make a living and I completely understand working with brands, but it feels like you’ve lost some of the ELR authenticity as of late.

I’ve followed your life (and the evolution of the blog) from living in Orlando and culinary school, to your California adventure, meeting Adam, getting married, becoming a mom, etc. My best friend and I talk about you as if you were one of our friends, LOL. I love all of your recipes and I love hearing about your life. (Just made your creamy potato soup this weekend; one of my favorite chilly weather recipes!)
With that being said, lately, I’ve been feeling like I’m left wanting more. I’m a tad disappointed with your recent recipes. One of the things that I loved so much about your blog was your dedication to GOOD food. The joy and enthusiasm you found in cooking and creating always shined through to the reader. You were the one who got me to start paying attention to the quality of ingredients I put into my food and into my body. Your recipes and writing inspired me. Which is why, to see you partnering with Green Giant for a recipe using prepackaged broccoli with added flavors and chemicals, I’m a bit disappointed. While this recipe does look mighty delicious (lord knows I love me some alfredo sauce), I think it would’ve been that much better with good, clean ingredients.
Gosh, this is turning into quite a diatribe. Basically, I still love your blog. I understand that your blog is also your livelihood, and that partnerships and sponsored posts are part of that. And I also know that with Grayson, your life is very full at the moment. I just want you to know that you have a bunch of women, who’ve been there with you from the beginning, who truly love Eat Live Run, and what it has always meant. I understand that life brings changes, and that those changes impact everything from our outlooks to our goals in life. I would never expect Eat Live Run to remain the same (if I did, I’d be looking for multiple posts per day with pics of everything you eat ;-]), but what I do hope is that you don’t lose your true aim. We are all here, rooting for you, and hoping that you continue to let us in to your life, one blog post at a time!

October 15, 2014 at 11:42 amI second all of this! I am a LONG LONG LONG time reader as well and have made so many of your recipes. I am also the mother of an 18 month old so I recognize the challenges that you face, and girl – I commend you for putting any effort into cooking and keeping up the blog.
However, I was really disappointed in the green giant aspect to this post. I try to eat fresh and organic produce and I know that you do as well. Since becoming a mother I too have turned to frozen vegetables to put together quick easy meals in a short time. I still always buy frozen organic produce – which is very affordable at many places. I would not eat Green Giant produce – especially the Tuscan variety which has so many additives and chemicals. I definitely wouldn’t feed it to my son.
I have the most respect and love for you Jenna and want to see you pushing products that you believe and being true to you. Only you know what that is.

October 15, 2014 at 6:29 amI used to make everything from scratch. With 3 stepkids and a toddler I am always looking for quick and easy and steamers are my life these days! They love pasta. I’ll give this one a try soon but will likely add some chicken or shrimp to the mix!

I find it troubling that so many are quick to comment with their disappointment when I bet many of them don’t understand how difficult blogging can be. Especially after years of writing. We have to mix things up. Life gets busy and family comes first. I took a little sabbatical of about a week and a half and it was crazy how guilty I felt. But then I remembered how much I had been enjoying my “real life” and that it was okay to put the blog on hold sometimes. Keep doing what you’re doing. Most of us will understand and keep reading along the way. 🙂

I relate more to your blog now. You don’t always have time for long grocery trips, long and messy dinner prep. Don’t listen to the naysayers.

As a mom of a 3 year old and 5 month old, I understand that staying home with a baby doesn’t always allow time for cooking (and photographing) a complex meal. I think these Green Giant recipes are a great way to make frozen vegetables into a fast and easy home cooked meal. Perfect for moms like me!
