St. Patrick’s Day is next Tuesday and I wanted to give you guys some recipe options to celebrate! I’m not Irish, nor do I care for green beer, but I do love celebrating holidays with fun themed food.
We are heading to Florida this week to celebrate one of my best friends, who is tying the knot with an amazing guy. I’m excited because we’ve rented a little house with a pool on VRBO for the weekend so Grayson is going to go swimming for the first time! I may or may not have gotten him the cutest swim suit ever. I plan to take lots of photos to share with you guys when I get back. Meanwhile, enjoy these green recipes!
Pistachio Pudding Cupcakes are fun to bring to a themed party! You only need three ingredients for the cupcakes so there’s no real excuse here.
Creamy Lime Squares are always a wonderful idea. These are a favorite of mine, as citrus desserts are the key to my heart.
These Smashed Chickpea, Avocado and Pesto Sandwiches from Two Peas & Their Pod are calling my name. If you have children, this would be fun to send in their lunchbox next Tuesday!
My Spicy Guacamole Hummus is a yummy snack or light lunch. You could also sandwich this between bread and call it dinner. Or breakfast, even!
I love this Green Goddess Pasta because it tastes so indulgent yet it’s actually quite light! The recipe serves one but it’s easily scalable for a family of four.
Okay so these Guinness Floats from Gimme Some Oven are not green but I’m making an exception because they sound so darn good. I would have a very happy hubby indeed if I made him one of these on St. Patrick’s Day!
On a lighter note, don’t these Maple Avocado Smoothies sound divine?
Or these Maple Spinach Smoothies with Flax Seeds? Both of those recipes (and photos) are courtesy of Pure Canadian Maple Syrup and look so unbelievably creamy and delicious. Not to mention, healthy!
