This is the quickest, easiest way I know how to squash a buffalo chicken craving.
This is definitely not a “fancy” recipe {at all!} but it’s absolutely delicious! And it takes no time at all to whip up. All you need is a chicken breast, some panko breadcrumbs, a bottle of buffalo sauce and some blue cheese dressing. Done and done. It really doesn’t get simpler and Adam would be happy to eat something like this every night if I let him.
You can enjoy these chicken strips right out of the oven or chop them up and throw them in a salad or in a burrito. And since they are baked, not fried, they are a much healthier option than the traditional bar food version.
So….kid friendly? Check. Guy friendly? Check check. Folks, we have a winner!
When I made these last week and Adam graciously offered to taste test, I asked if he thought you guys would mind that they are more “fork and knife” chicken fingers than the “pick up kind”. He said they taste so good so no one would care that they needed a fork. Hopefully you guys will agree! He then went on to say he needed to try “one more” to make sure it was okay….and then that turned into another….I’m sure you guys can see where this is going.
Sure, you could easily make your own blue cheese dressing but sometimes it’s nice to keep things easy and just grab some pre-made off the shelf. And yes, I made absolute certain the dressing I chose was pregnancy friendly {I even called the company}. I don’t always LOVE the strong taste of blue cheese, but with buffalo chicken it’s an absolute must.
These would make a great weeknight dinner with some roasted broccoli and rice pilaf. I am already planning to make this again as part of our dinner rotation since we both loved them so much!
Easy Buffalo Chicken Fingers
serves 3-4
Ingredients:
1 lb boneless, skinless chicken breast, cut into 1.5″ strips
sprinkle of salt and pepper
1 cup Panko breadcrumbs
1/2 cup buffalo sauce
blue cheese dressing for dipping
Directions:
Preheat oven to 400 degrees. Spray a 9 x 12″ glass casserole dish with nonstick spray and set aside.
Place your panko breadcrumbs in one shallow dish and pour your buffalo sauce in the other. Sprinkle salt and pepper over each strip of chicken and then dunk each into the buffalo sauce followed by the panko. Lay flat in your prepared dish.
Repeat with remaining strips and place in oven to bake for about 25-30 minutes, until chicken has cooked through. Remove and let cool before serving with blue cheese dressing for dipping!

February 25, 2014 at 5:39 amI’m sure I’ve posted this in your comments during a wing sauce recipe before but the best one I’ve ever had is as follows:
1 shallot minced and sautéed with 1 tbsp. butter until lightly browned
1 clove of garlic, sautéed but not chopped, merely for flavor with the shallot
1/4 cup of sherry, added to the browned shallots and reduced
1/2 stick of butter melted in the pan
1 bottle of frank’s red hot sauce
1 tsp of honey.
Simmer and taste-test until desired ratio of butter:hot sauce: honey is achieved. Strain when finished.
Alternatively, I just microwave 1/2 cup of frank’s with 1 tbsp. of butter, a pinch of honey and a pinch of garlic salt

It’s really funny, 4 year old son LOVES them as his favorite potatoes, and 6 year old daughter is kind of “meh” when she sees them. Three out of four family members approve! We have never been a “buy frozen fries” family, but why would you, when you have this recipe, anyway.
We also did your Crockpot lasagna, and used chicken sausage with the spinach. Turned out great!
